The BSc. Post-Harvest Technology program is a multidisciplinary program focused on reducing post-harvest losses and improving the quality, safety, and marketability of agricultural produce. This program integrates principles from food science, engineering, economics, and management to equip students with the knowledge and skills to handle, store, process, and distribute agricultural products efficiently and sustainably. Students will learn about the biological, chemical, and physical changes that occur after harvest and how to control these changes to minimize losses. The curriculum covers topics such as post-harvest physiology, storage technology, food processing, quality control, packaging, and supply chain management. Emphasis is placed on practical application and innovation to address the specific challenges faced by the agricultural sector in Ghana and beyond. The program also integrates entrepreneurial skills to enable graduates to create value-added products and services and contribute to the development of a sustainable post-harvest sector.
